Tassie Tomatoes & Bruschetta

Our tomatoes are Organically grown Vine Ripe sourced from Launceston and available December through to April.


Despite botanically being a fruit, it’s generally eaten and prepared like a vegetable.

Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer.

They are also a great source of vitamin C, potassium, folate, and vitamin K.


Bruschetta is one of those gems that proves you can make incredible food in minutes with a few simple, great quality ingredients.

- 6 slices of Sugar ant Ridge Sourdough (traditional)
- 3 Vine Ripe Tomatoes
- TBS diced red onion
- TBS curly parsley
- TBS balsamic vinegar 

1. Slice sourdough and place in grill on low to warm
2. Dice tomatoes (discard seeds), red onion and parsley. Mix together and add balsamic vinegar.
3. When bread is warm take out of grill and serve tomato mix on top. Top with a dash of balsamic vinegar to serve.
